To Undeploy a workflow:

1. Undeploying a Workflow can be only done for deployed workflows. A disabled/undeployed workflow will not appear in the workflow options when you trigger a Workflow.

2. Navigate to the Workflow Builder window, click the Deployed option in the top right corner, and select Undeploy.
